This is the gate most home cooks skip without realising they've skipped it. Gate 02 is where deeper flavour actually gets unlocked, not added, unlocked. It's already there in your ingredients. This is the stage that gets it out.

This is the single highest-leverage five minutes in most dishes, and the one most people skip without realising they've skipped it.

What it actually is

Toasting whole spices before grinding them. Caramelising onions properly rather than just softening them. Blooming cocoa or coffee in hot fat. Deglazing a pan to lift everything that's stuck to the bottom back into the dish. All of it happens fast, and none of it looks like “cooking” in the way people usually picture it.

How it shows up across cuisines

Toasting allspice and pimento berries before they go into a Jamaican stew unlocks oils that stay dormant in the whole spice. Blooming cocoa powder in hot butter before it goes into a chocolate bake does the same job: flavour compounds that are chemically present but flavourally asleep until heat wakes them up.

This is the biggest gap between food that tastes homemade and food that tastes like it came from a kitchen that knew what it was doing. Most of what people mean when they say a dish has “depth” was built right here.
