By the time you reach Gate 03, the flavour direction of the dish is already set. This gate is about what the dish is actually made of, the substance someone will remember eating.
Meat, beans, and pulses in savoury cooking. Flour, eggs, and chocolate in baking. The main body of the dish, added once the flavour groundwork from Gates 01 and 02 is already in place, so it has something to actually take on rather than sitting in a pan with nothing around it.
This is also the stage where structural allergens, like gluten in flour or proteins in shellfish, enter the pot. Understanding what your structure is made of is the first step to cooking safely for people with specific dietary needs.
A plant-based dish built around beans and pulses is doing precisely the same structural job as a dish built around meat, both need the base and activation stages done first so the main substance can absorb what's already been built, rather than just being seasoned from the outside. A grain-and-vegetable bowl carries its own version of the same principle: the grain is the structure, and it only works if it's been given something to actually take on.
Get the flavour work right in Gates 01 and 02 and then rush this stage, and the dish will still read as underdone or characterless. This is what people are actually eating. It is not just the protein you drop in at the end, it deserves the same care as everything that came before it.
